草鱼去头,从背部破开,洗净晾干水分。

晾干水分的草鱼取下来,均匀抹上白酒,放盒子里,盖上盖子闷1小时以上(先用酒闷再腌制,会更香)。
盐、花椒、八角、桂皮一起放锅里,小火炒制出香味,盐微黄(方中量炒了10多分钟),熄火稍放凉。

炒好的盐花椒八角桂皮放在保鲜袋上,将保鲜袋折叠,用擀面杖擀成末。

将腌好的鱼晾挂在阳台,风干到表面完全干透、微微出油,捏上去内部有一点回弹,就风干好了,这时可放冰箱冷冻保存(图为风干好了的腊鱼,风干用时8天)。
