四川香辣红烧鱼

用料
昂刺鱼 2条
酸辣椒 适量,没有可用小尖椒代替
姜 4片切丝
蒜 2瓣拍扁即可,蒜切太细会味太重
酒酿 3汤匙
老抽 2汤匙
盐 适量
豆瓣酱 1汤匙
糖 1汤匙
醋 半汤匙
葱 3根切碎
四川香辣红烧鱼的做法
两条鱼下油锅炸一遍,可使外皮酥脆。如用铁锅炸,可用姜片先擦一下锅可防止鱼皮粘锅。想外酥里嫩可少炸一会儿。炸好后捞出待用。
制备汤汁
放入豆瓣酱、姜蒜、辣椒,炒香至水干。这时放入事先烧好的开水哟,加入糖醋酱油酒酿和盐调味哟~

我用的昂刺鱼,好吧,好浪费,其实应该用鲫鱼的。
