配料:牛肉4-5斤、砂糖3小匙、沙拉油3大匙、酒2大匙、老姜250克、蒜35克、辣豆瓣酱1碗、盐1大匙、面条70克、红辣油半碗、味精半匙、酱油2小匙、葱花少许
做法:先将牛肉去油,清洗干净,切成长条块,放在热水中煮去血水,见牛肉颜色变浅,即可捞出;姜切成小块、拍裂;蒜去老皮,拍裂。然后把砂糖、沙拉油用小火炒成糖色酱,把牛肉、酒放入锅中后改用中火翻炒均匀,再把豆瓣酱、辣油一起炒;再放入盐、姜块、蒜、高汤,再用小火煮2-4个小时,即可。把盐、味精、酱油、葱花一起搅拌均匀,备用。再用另一个锅烧水,水开,将面条抖散放入锅中,等水开后,先舀半碗面条汤放在盐、味精、酱油、葱花搅拌的碗中,再放上已经烧好的牛肉及汤,即可食用。
