猪皮冻熬不凝固的原因

肉皮上的肥肉(油)没有剃干净;煮的时间不够;水放的太多。
如果水多使猪皮冻不凝固,出现这样的情况,应该回锅重新熬制,待水量始终时起锅。

猪皮冻熬不凝固的原因可能有3个:
1、肉皮上的肥肉(油)没有剃干净;
2、煮的时间不够;
3、水放的太多。

做皮冻有讲究:
1)选料:要选厚一点的皮子,含的凝胶蛋白高是做好皮冻的基础,皮子太薄是小猪的皮子,生长时间短,凝胶蛋白的含量有限,不适合做皮冻用;但不是越厚越好,老母猪的皮子虽然厚,凝胶蛋白并不高,也不适合做皮冻。
2)初步处理:一定要去掉外边的老皮,就是去净毛发后,表皮烧(最好烙)一下,否则表皮发暗,影响成色,用温水泡后刮洗干净,汆一水。
3)制作:洗净的肉皮入冷水锅,加入葱段 姜块(拍碎) 无香料包 料酒等,大火烧开,小火焖煮至七成烂时,捞出改刀成条(切碎),继续煮透熟,用手搓感到有粘性时,撇净余油就可以调味起锅了。
4)装盆:洗净的容器晾干,不能有水,最好用火烤一下(不沾容器壁),倒入质料,常温放置,中途用筷子把上面的冷凝皮要挑破(一定不能忘了),凉透就可以了。

做法:将彻底弄净的猪肉皮切成筷子粗细的寸段,放到铁锅里煮。放少许精盐,同时放入花椒、大料、桂皮、鲜姜等调料。先煮一个开,然后文火,再煮几个小时,煮到水已经粘了为止。倒入盆子等敞口容器内,放到摄氏5度左右的地方凝固。 关键:1,皮上的肥油一定要刮净。2,水一定要适中,可以先多放一些,然后再熬到适中的程度。3,低温凝固。4,吃的时候可以切成片状块,粘一些蒜泥酱等调料吃即可

水份太多,浓度不够;温度高了。熬好后放入冰箱冷藏一下,会成冻的。本回答被网友采纳
