派的皮不用发面,它是一种黄油蛋酥面皮。介绍如下:

低筋面粉225g,黄油90g,蛋黄3个,糖50g 。就是如此简单。商业制法还要加色素、香精。为健康起见自己做就不加那些了。还是纯天然材料好。

派皮做法:

1.黄油软化后,将所有派皮材料混合,揉成团后放入冰箱冷藏30分钟

2.从冰箱中取出冷藏后的面团,擀开成皮,放入9寸的派盘或者pizza盘中,轻轻压实后去掉多余的边

3.上面铺上两层锡纸后,倒入绿豆或者米,放入预热200度的烤箱第二层烤10分钟后取出,将上面的锡纸和绿豆或米去除,再放入烤箱中烤5分钟至表面金黄,取出备用

然后按自己的喜好加入馅料(八分满即可),放入预热180度的烤箱中层烤20至25分钟后取出。放凉后食用。

Lemon Chess Pie
Serves 8

Tart lemon juice adds a welcome balance to the richness of this pie. Garnish with blueberries or blackberries.
Ingredients

1 1/4 cups organic evaporated cane juice sugar
1 tablespoons finely ground cornmeal
1/2 cup (1 stick) butter
3 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons vanilla extract
1/4 teaspoon sea salt
1/4 teaspoon sea salt
4 large eggs
1 8- or 9-inch pie crust (not deep dish)
Method

Preheat oven to 350°F. Mix the sugar with the cornmeal in a blender on low. Gently melt the butter in a saucepan and add to the blender, along with the lemon juice, vanilla and salt. Blend on low. Add eggs, one at a time, blending to combine. Pour batter into crust and bake for 35 to 45 minutes, until the pie is just set in the middle. Cool on a rack before serving.
