1.将鱼除内脏,鱼鳞刮净,清洗干净后将盐均匀涂抹在鱼身上,反复用手按压确盐浸入鱼肉腌制2小时后把鱼身上的水沥干。

2.锅里放油烧制半热,将火调小,把鱼放进去,抖下锅,鱼在锅里能滑动说明鱼皮没沾锅,鱼皮没破。

3.一面煎黄后翻至另一面继续煎,将鱼煎至两面微黄即可。

4.煎的过程当中切好葱姜蒜,备些花椒。
5.鱼煎好后将准备的葱姜蒜,青椒花椒,料酒,一点生抽和适量的醋倒入锅中。
