材料
1鸡蛋4个(带壳约60克/个)、玉米油40克、浓稠酸奶65克、低粉60克、细砂糖40克
218*18*4.5固底方形模具,金盘1个用于水浴
做法
1油纸剪开放入模具,金盘放置于烤箱下层,加入1cm冷水,预热140度10-15分钟,至水中可以看到小气泡
2将玉米油加热至70-80度,加入低粉搅拌
3加入酸奶搅拌(我用了自制的无糖酸奶),最后加入蛋黄搅拌均匀
4蛋白分2次加入细砂糖,打发至湿性发泡
5将1/3蛋白霜加入蛋黄糊内翻拌,再倒回蛋白霜内全部翻拌均匀
6倒入模具放入水浴,140烤65分钟,烤完以后取出放凉
